Cosimo Siena is very committed to the research and selection of seasonal ingredients produced by local companies with sustainable techniques.
The recipes served at the trattoria combine tradition, taste, authenticity and innovation in an excellent way.
All’ Nchianata will provide his clients with informations regarding the ingredients and recipes of the menu, using ceramic tableware produced in Grottaglie’s artisan workshops. A way to prepare and share the proposed dishes with the guests, to give them the opportunity to “taste the territory” and take the recipes with them.
